Course of action

  • Preheat the oven to 200 degrees. Place the cauliflower on a baking sheet with a tablespoon of olive oil, salt, pepper and half of the coriander.
  • Let the cauliflower cook for 30 to 35 minutes. Turn it over when half the time has passed. It is finished when it is golden brown.
  • In a large saucepan, heat a little oil over medium-high heat. Add the shallots, carrots and the remaining coriander.
  • Fry for 3 to 5 minutes until the ingredients are soft. Stir often.
  • Add garlic and fry for another minute until golden.
  • Add the coconut milk and heat until the soup starts to boil.
  • Reduce to low heat and cook for another 5 minutes.
  • Add pumpkin puree, vegetable broth and water.
  • Continue at low heat. Add extra salt and pepper to taste.
