If you mix carbohydrates, such as pasta, with vegetables, such as pumpkin, it can be seen as unusual. But today we will show you how to make a delicious recipe with spaghetti and pumpkin.

How to make a dish with spaghetti and pumpkin

A classic recipe

As you know, the most common recipe is made with pumpkin pumpkin soup. This vegetable is most commonly served as chopped or diced.

It can even  be used to make a sauce that can be used on other dishes. This is essentially what we intend to do with this recipe.

In the classic recipe for spaghetti and pumpkin,  use pumpkin to make a sauce for the pasta. We suggest using spaghetti here, but you can easily replace these with any other kind of pasta.

The interesting thing is how the taste is combined and blended in a delicious way.

Ingredients

  • Spaghetti (300 g)
  • 1 large onion
  • 600 g peeled pumpkin
  • 250 ml fat sour cream
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons nutmeg (30 g)
  • 1 tablespoon salt (15 g)
  • 1 tablespoon green pepper (15 g)
  • 200 g parmesan cheese (optional)

Course of action

  • Add a drop of olive oil to the pan and then the onion. Fry them on medium heat with a little salt.
  • Then add the peeled pumpkin to the pan with the onion. Fry until soft.
  • From time to time you should stir a little to get a more uniform mixture.
  • Meanwhile, it’s time to put the spaghetti in a pan with water, oil and salt and let it boil.
  • Put the thick sour cream on the pan and add a little cheese, which you stir together. When the spaghetti is ready, then add the other ingredients to it and cook it all together for 2 minutes.

A recipe for spaghetti with pumpkin and mushrooms

This variation of the original recipe is almost easier to make than the first. If you have a little extra time, you can add some pesto and even chicken fillet. But by making it with pumpkin and mushrooms, you have an unsurpassed and very nutritious recipe.

Ingredients

  • 200 g spaghetti
  • 3 chicken fillets
  • 400 g chopped pumpkin
  • 100 g mushrooms
  • 2 stalks of broccoli
  • 1 large onion
  • 2 cloves garlic, chopped
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1 tablespoon salt (15 g)
  • 60 ml white wine

Course of action

  • Start by steaming both pumpkin and broccoli.
  • Then fry onions and garlic until browned.
  • Add the mushrooms when the onion is browned. Mix it all together for a minute. Do not forget to add salt.
  • Meanwhile,  place the chicken fillets in a pan or on a frying pan and grill.  Then cut them into cubes and add them to the remaining ingredients.
  • Do the same with the steamed pumpkin and broccoli.
  • Add the white wine to the pan with all the ingredients and fry it all for two minutes. This will add a special flavor.
  • Finally remove it from the flame, let it cool and enjoy!
