You will probably be surprised to hear that the original version does not contain either cream, garlic or onions. Recipes that usually require these ingredients are either Spanish or American.

  • Water
  • Hardened pork or bacon
  • 2 medium-sized eggs
  • Spices: Salt and black pepper
  • 1/2 packet of spaghetti (250 g)
  • Olive oil (as needed)
  • 75 grams grated pecorino cheese
  • 75 grams of grated parmesan cheese
  • Optional: Fresh parsley (as needed for serving)

Course of action

  1. Grease the pan with a little olive oil and preheat it over medium heat.
  2. Let the water boil, with 1 or 2 teaspoons of salt (to taste).
  3. When the water starts to boil, then add the pasta. Let it cook until it is  al denteRemember to stir the pasta once in a while so that it does not get stuck in the pan.
  4. While it is simmering, remove the fat from the bacon and cut it into small cubes if it is not already purchased in cubes. 
  5. Fry the pork on the pan for 2-3 minutes and set it aside so you can use it later.
  6. Punch a hole in the eggs and separate the egg yolk from the egg white. For carbonara, you only need two egg yolks.
  7. Then mix them together with the cheese, and whip until you have a smooth consistency. It is important that you do not leave this mixture for too long, so keep an eye on it.
  8. Sift the spaghetti, but save some of the water it was boiled in (about 60 ml. Is enough).
  9. Add the pork to the spaghetti and mix the ingredients well.
  10. Next, pour a little water over the mixture with the eggs and cheese. Stir it all together.
  11. Grind a little black pepper and sprinkle it on top. The more pepper you add to the dish, the more authentic the taste will be.

  • 1 packet of bacon (100 g)
  • 2 medium-sized eggs
  • 4 tablespoons cream (60 ml)
  • 1/2 packet of spaghetti (250 g)
  • 3 tablespoons grated parmesan cheese (45 g)
  • Olive oil (as needed)
  • Spices: Salt, black pepper (freshly ground)

Course of action

  1. As in the previous recipe, you have to cook the spaghetti first. Be sure to stir it occasionally so it does not get stuck in the pan.
  2. Cut fat from bacon and cut it into small cubes. Then fry the cubes in a good amount of olive oil for approx. 2-3 minutes.
  3. Beat the eggs in a bowl and beat them with a fork until the egg whites and egg yolks are mixed together. Mix it with the cream and save it for later.
  4. Sift spaghetti from the pan. When you set it aside, immediately then mix it with eggs, cream and parmesan cheese. That way, the three ingredients will be mixed well and you will get a compact and delicious dish.

Additional recommendations

If you happen to not have both types of cheese, as mentioned in the traditional recipe (parmesan and pecorino), you can just use parmesan cheese or any other type of semi-hard cheese. That way, you do not drastically change the taste of the dish.

There are also some people who like to use the whole egg when making the sauce. Thus, it is not mandatory to throw away the egg whites. Each person has their own preferred ways of doing the dish.

But the most important thing is to try to make the dish without dairy products in combination with the raw eggs. This will keep the recipe from being too heavy in the stomach. Also in this way you will avoid food poisoning, because otherwise it is advisable to eat the dish the same day you made it. 

Finally, it is important to remember that the traditional recipe for spaghetti carbonara is made with hardened pork instead of bacon. However, bacon has become a very common ingredient in the American version.
